Lemon Garlic Steak with Zucchini Noodles

First of all, let’s just agree that quick, one-pan meals are the bomb! It can’t get any quicker, simpler or more delicious than meals like this one.

I first discovered this recipe on eatwell101.com but have made a couple of minor adjustments to suit our tastes. Feel free to check out the original recipe here and I totally give eatwell101.com credit for this dish.

The farmer LOVES this recipe and he thinks the leftovers are even better. It’s full of flavour and has a bit of a spicy punch to it.

Lemon Garlic Steak with Zucchini Noodles

Tools You’ll Need

Ingredients

  • 1 1/2 pounds top sirloin or flank steak
  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons butter
  • 1 lemon, juice and zest
  • 1 tablespoon honey
  • 1/4 cup dry white wine
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chopped fresh parsley
  • salt and pepper to taste
Steak Marinade
  • 1/3 cup coconut aminos
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 1 tablespoon Sriracha sauce

Directions

  1. Cut the steak (against the grain) into 1/2 inch strips.
  2. Combine the ingredients for the steak marinade in an airtight container or ziplock bag.
  3. Add the steak strips to the marinade and seal.
  4. Marinate steaks in the refrigerator for 1 hour or overnight.
  5. When it’s time to make the dish, take the steak out of the fridge and bring to room temperature.
  6. Reserve steak marinade for later.
  7. Wash and trim the zucchini.
  8. Use a spiralizer to make the zucchini noodles (stick to the 4 zucchinis. After you spiralize 2 you’re going to think that’s enough. It’s not.)
  9. Heat olive oil over medium-high heat in a large skillet.
  10. Add steak strips to the pan in a single layer and season with salt and pepper.
  11. Cook steak for 1 minute.
  12. Add minced garlic and stir steak for 2 minutes to cook the other side of the steak.
  13. Remove steak from the skillet and set aside.
  14. In the same skillet add butter, lemon juice, zest, red pepper flakes, honey, wine, and the steak marinade.
  15. Bring to a simmer and reduce for about 3 minutes, stirring regularly.
  16. Add parsley and then zucchini.
  17. Toss for 3 minutes to mix up the marinade with the noodles.
  18. If the zucchini has rendered too much water, let juices reduce for a couple of minutes.
  19. Add steak back to the skillet and stir for another couple of minutes.
  20. Serve immediately.

Meal Prep Notes

  • You can spiralize zucchini 2 or 3 days in advance and store it in the fridge.
  • 24 hours is the maximum you would want to marinate the steak.
