Graduation Cupcakes

Graduation season is upon us! Why not celebrate the new grad in your life with these adorable and super easy to make cupcakes?

I love baking cupcakes. It is probably one of my favourite things to do! I especially love experimenting with decorating. There are so many fun ideas out there that I have tried (thank you Pinterest!). Sometimes they turn out amazing, other times not so much. I wouldn’t say I’m overly talented in the cupcake decorating department but what I lack in skill, I definitely make up for with heart. One thing I can say is that my buttercream icing is ALWAYS a hit!

Since it’s only the two of us at home, I don’t bake cupcakes for us very often so I am always THRILLED when someone asks me to bake cupcakes for a special occasion.

A few years ago I was asked to bring cupcakes to our nephew’s graduation barbecue. I was very honoured to be a part of the graduation festivities and super excited to get to make the cupcakes. I wanted to create something special for our nephew’s graduation day. These cupcake toppers were spectacularly easy to make but turned out so great! They would be adorable for Kindergarten graduation or even for an end of school year party.

What You Will Need for the Graduation Caps

  • Mini Reece’s Peanut butter cups
  • Chocolate candy bar with square pieces
  • Shoestring licorice or gummy strings
  • M&Ms or Skittles
  • Melted chocolate wafers for the “glue”

Directions

  1. Bake your cupcakes using your favourite cupcake recipe. Use a cake mix from a box or make them from scratch. I won’t judge! I experiment and try different cupcake recipes all of the time, including gluten-free recipes that people don’t even realize, are gluten-free.
  2. While your cupcakes are baking and cooling, assemble your graduation caps and then put them in the fridge to set.
  3. Make your icing.

Mrs. Lazyspoon’s Buttercream Icing

  • 1 cup unsalted butter (at room temperature)
  • 2-3 cups icing sugar
  • 1 teaspoon vanilla extract
  • Wilton Gel Icing Colours in the school’s colours

Directions

  1. Smooth butter in a mixer until the butter is light and fluffy (this will take about 5 minutes).
  2. Gradually add icing sugar until incorporated. I usually use 2 cups of icing sugar for sure and then I may have to add a bit more depending on the taste.
  3. Beat in vanilla extract.
  4. Beat for another 2 minutes.
  5. Add Gel Icing Colour if using. You don’t need a lot of this. I usually dip a toothpick into the gel and then swirl it in the icing and mix. I keep doing this until my icing is the desired colour. Use a new toothpick every time or you will contaminate your Gel Icing Colour.
  6. This will ice about 12 cupcakes.

Once your cupcakes have cooled. Pipe the icing onto your cupcakes using the 1M or 2D icing tip and a piping bag. Once you’ve iced all of your cupcakes, top each of them with your adorable graduation caps.

There isn’t a cuter way to say congratulations to your graduate than with these adorable and super easy-to-make cupcakes!
