Granny’s Welsh Cakes Recipe

My Granny’s Welsh background is obvious in many of her recipes including these welsh cakes, also known as bakestones or griddle cakes because they were traditionally cooked on a stone or cast iron fry pan. My granny made her welsh cakes on an electric griddle but I make mine in a frying pan and they turn out amazing.

When I think of visiting granny’s house, there were ALWAYS welsh cakes stored in an ice cream pail separated by wax paper. We’d devour these cakes for breakfast, as a snack, and for bed lunch. I always loved mine smothered in cheese whiz but they are also delightful with butter and jam or with nothing at all.

One of my most cherished possessions is my Granny’s recipes that she wrote out on index cards. I’ve even framed a couple for my kitchen including this Welsh Cakes recipe.

Welsh cakes are definitely a family favourite that we often enjoy on Christmas morning with various spreads, fresh fruit, and mimosas. They are so good when they’re hot that the Farmer is usually eating them as quickly as I can make them.


Granny’s Welsh Cakes Recipe

Tools You’ll Need

Ingredients

  • 2 1/4 cups flour
  • 1 tablespoon baking powder
  • 2/3 cup white sugar
  • 1 cup butter, cut into cubes
  • 1 1/2 cup raisins
  • 1 egg, beaten
  • 1/2 cup milk (or half and half)

Directions

  1. In a mixing bowl, mix together dry ingredients with a fork.
  2. Using a pastry blender, cut the butter into the dry ingredients.
  3. Add raisins and stir using a wooden spoon.
  4. Add the egg and milk and continue to stir until a dough is formed. You may wish to use your hands to knead the dough.
  5. Separate the dough into two balls.
  6. Roll out one ball of the dough on a floured surface about 1/4 inch thick.
  7. Use a biscuit cutter or cup dipped in flour to make biscuits.
  8. Continue rolling out the dough and cutting out biscuits until you’ve used up both balls of dough.
  9. Heat the frying pan to 300F (low-medium heat).
  10. Bake the first side for 2 minutes and then flip and bake for another 3 minutes.
  11. Remove from the frying pan and serve.
